Which size Vitamix should I choose?
Yes, I am seriously considering purchasing a Vitamix. The question is: which size? Should I get the top of the line or is the basic one a good choice? Decisions, decisions...
Also, I love my smoothies more liquified, so can I adjust the consistency to make it so, or do they come out thicker with the Vitamix than (what I do now, a 2-step process) juicing and blending?
Your advice would be greatly appreciated.

*****Sassy Sez: Great question. The main Vitamixes you have to choose from are the same, it is just the "extras" that come with them that you may (or may not) need.
The
Vitamix 5200 is perfect if you really just need "the blender" - also called a "Wet Container". This is what you will likely find yourself using the most. I start my morning with a smoothie, then for lunch I might whip up a soup, and at dinnertime might create a sauce with it. It's safe to say the Vitamix gets a workout in most kitchens that have them.
The Vitamix Super 5200 comes with the Wet Container, and in addition a "Dry Container" for grinding grains to make flour for things like bread and pancakes. You can also grind seeds in it, etc. Do you think you'll want to make your own flours and grind seeds?
Sometimes I use my Vitamix dry container, and other times I will use a small electric grinder, depending on how I feel and what is the most handy at the moment. So is the dry container crucial? No, but that is a question only you can answer.
The 3rd option, the
Vitamix Deluxe 5200 comes with the Wet Container, the Dry Container AND an additional smaller Wet Container. And it comes with all sorts of cookbooks, spatulas, and flexible cutting boards.
Honestly, I think the Vitamix Deluxe 5200 could be a bit overkill for most home cooks. Having said that, some people want it all! They need the cookbooks, they need spatulas, they need cutting boards, and in that case I would recommend this one because it really is the best deal when all is said and done.
Regarding your second question, yes, you can certainly adjust the consistency of your smoothies using the Vitamix. It's just a different experience, and may take some getting used to switching from juicing out the fiber, to keeping the fiber intact. But once you get in the swing of things, you will find your juicer is a big ol' pain in the bleeeeep. ;)
Jeff and I used to juice just about every single morning, for years! But now our poor Champion juicer just sits in the cupboard since I make my whole food smoothies in the morning. I use frozen blueberries, raspberries, blackberries and strawberries, which can all add up to a nice amount of fiber. So I just use more coconut water/juice until I get the proper consistency. It took a little trial and error (very little!), but once you get the hang of it then it all works pretty beautifully.
