Vegan substitute for sour cream

What can you substitute in recipes that call for sour cream?

*****

Sassy Sez - My favorite vegan sour cream can be whipped up in just minutes with a blender.

Here is my Cashew Sour Cream recipe, which is not only vegan but also raw. You can tweak the amounts of ingredients to your personal taste - enjoy!

Sassy's Cashew Sour Cream

2 large handfuls of cashews
1-2 Tbsp lemon juice
1 tsp white miso
1/2 - 1 tsp apple cider vinegar
1-2 tsp nutritional yeast
Water - just to reach the desired consistency (add slowly!)
A sprinkle of sea salt

Process in a blender. Your Cashew Sour Cream is ready to go.

Yum-O!

That looks way yum! I totally have to try it. My old stand-by is 1 package (I think they're 12 oz) of silken tofu - I like firm or extra firm - blended with 1-2 T. Raw Apple Cider Vinegar, 1-2 T. Lemon Juice and a little Real Salt. I use a hand blender which makes cleanup a snap.

I bet the cashew one is way yummy, too! I can't wait to try it!
