Choose potatoes and yams that feel heavy. Avoid any potato or yam with decayed areas (usually at the ends), blemishes or sunken spots.
Choose potatoes of comparable size for uniform cooking. When selecting potatoes (such as russet, golden, and red) look for very firm potatoes -- those that are on the soft side or have a green tinge are to be avoided.
There are two main types of sweet potatoes, and it's helpful to know the difference between them. Sweet potatoes that have pale, thin skins have yellow, dry flesh with a crumbly texture, like russet potatoes. This type of sweet potato is not sweet.
The other popular variety of sweet potatoes have thick skins that are darker in color. The flesh is bright orange, sweet and moist. Handle with care, as their skin is delicate. They don't keep as well as other potatoes, so be sure to eat them within a week.
Many people mistake sweet potatoes for yams, and vice versa. Yams have very dark skin and their flesh is purple or red, and tends to be sweeter than a sweet potato. Yams have a high moisture content.

No need to peel before creating your potato, yam or sweet potato recipes. The skin is delicious and contains many nutrients.
When chopping these veggies before they've been cooked, begin by carefully cutting it in half so you have a flat surface. Then place that flat surface on your cutting board and continue to chop, dice, etc.
When cooking the whole veggie, be sure to prick holes all over it with a fork to release pressure as it cooks.
