When you went vegan you might have imagined things would be (pretty much) the same as they've always been, right?

Jeff here. I've been the person in our household in charge of grocery shopping for years, as well as organizing all of our ingredients (including bulk foods) at home.

But let's just say that it wasn't always easy. Especially when we first went vegan back in 1994.

I'll never forget walking into the Sacramento Food co-op back in 1993. I saw something I had never seen before: a bulk section. From the standpoint of a guy raised on conventional grocers in the Midwestern states, just the sight of a bulk section was very intimidating. What was all that stuff? It seemed that you would have to be an expert/professional chef to know what could possibly be cooked with it all.

Being a new Vegan at the time, I was nonetheless excited to experiment with new ideas and foods.

However, this was a little overwhelming.

It was a grocery store, no doubt, but unlike one I had ever been to before. It all seemed so complicated. Rows of different types of beans, grains, and foods I hadn't even heard of-how could I possibly take the time to understand what these strange foods were? I was totally clueless on what I would even do with them if I did buy them.

But over the years I figured things out.

So many people over the years have come to us with the same exact challenge I had back then.

That's why I created Stock Up With Jeff.

"Oh my goodness. I'm honestly quite taken aback. Yesterday, in the middle of a busy day, I came into my transformed little kitchen, full of all sorts of beautiful food. Mysterious new whole grains, colourful pulses, big seeds, little seeds, teeny seeds... all sorts of nuts...and a fridge full of fresh vegetables. Nothing in a tin.

"Without a recipe, I just tore up some red leaf lettuce straight onto plate, threw on a chopped salad onion and some garlic, added a good handful of gorgeous chopped orange bell pepper and chucked over some pumpkin seeds. From my bowl of pressure cooked butter beans in the fridge, I scooped out a portion that just took my fancy. I squeezed some lemon juice directly onto my salad and drizzled a teaspoon of olive oil over the top of it. I liberally crunched some coarse ground black pepper over everything. I had a slice of vegan rye bread on the side with soya spread.

"To have a bit later, I filled a small bowl with soya yoghurt, sprinkled it with roasted flaked hazlenuts and added a tiny spoon of maple syrup. It all took about three seconds, was totally spontaneous and stress free. It looked so gorgeous and tasted super delicious. And that's before I've so much as opened a packet of my new delivery of dried herbs and spices.
