Stock from Cooked Beans

Can you use the stock from the cooked beans for soup or should it be discarded?

Hi Leslie - Yes, you sure can. Before we had our pressure cooker, Jeff's specialty was a yummy bean and veggie soup, lovingly called "Sloopy Soup" -- neither of us can remember exactly WHY we called it that though. :-/

ANYway, he always made the soup with soaked (drained) beans and veggies, so the cooking water remained through the whole process, from the start of cooking all the way down into our tummies. :O)

Just be sure you DO NOT use salt or salted vegetable stock/bouillon (opt for salt-free). Or wait until the beans are done cooking before you add salt or vegetable bouillon. Otherwise the beans may not cook properly and will be hard. Which would be sad.

Salting Beans

Hey Coach,

I always salt my beans while cooking - it doesn't seem to take any longer and they have better flavor.

However, I did make the mistake of throwing soaked uncooked beans in a batch of chili. The tomato juice didn't allow them to cook. Live and learn. Hey, it was my first time!

The cooking water from garbanzos is delicious and can be used in place of vegetable broth.

Handful - That is good advice you have given to our fellow Vegan Coach peeps. Cook the beans before adding to chili, or add the tomato-ey ingredients afterwards. Thanks. :)

Patricia -- great name! :) -- great tip. Gbeans are so delicious, and their cooking liquid is rich and delish.

Also, many people only seem to use garbanzos for hummus or the well-known soup Pasta with Chickpeas (or as my Italian granny used to say, "Come-a and get-a your Pasta e Ceci-da"). But they have so many more uses, such as whizzed to make this Vegan Beet, Chickpea, and Almond Dip, or simply mixed whole with other yummy ingredients to make a delicious dish like this Vegan Peanut Butter Coconut Rice.
