To make your stir-fried celery, begin by slicing or chopping the celery to the desired size. Next, heat a large pan or wok over medium-high heat. Add a small amount of extra-virgin olive oil (1-2 teaspoons should do it).
As with most times you use this cooking technique, you can add additional veggies. Just be sure that all veggies have been cut to approximately the same size so they cook in the same amount of time. The more dense veggies should be added to the pan first (such as carrots), with the less dense and more fine veggies (such as bok choy) added towards the end...
...or you can parboil the more dense veggies first, and add all veggies to the pan at the same time. (What is parboiling? Simply put, immersing cut veggies into a pot of boiling water until they're "partly" cooked; then drain.)
Celery will cook up in approximately 3-5 minutes (until tender).
To create a quick stir-fry sauce that works with most dishes, combine 1/2 teaspoon Sucanat (or dry sweetener of choice), 1 large tablespoon cornstarch and 1/2 cup soy sauce. (I also like to add some nutritional yeast.) Add to pan of veggies and cook, stirring constantly, until thickened.
