Making stir-fried cabbage is a fun, quick and easy way to enjoy this nutritious veggie.
Shred the leaves first using a food processor, or a stainless steel knife (to avoid discoloration of the leaves).
Heat a large pan or wok over medium-high heat. Add a small amount of extra-virgin olive oil (1-2 teaspoons should do it). Add the shredded cabbage and stir for 3-5 minutes, or until tender.
As with most times you use this cooking technique, you can add additional veggies. Just be sure that all veggies have been cut to approximately the same size so they cook in the same amount of time.
To create a quick sauce that works with most dishes, combine 1/2 teaspoon Sucanat (or dry sweetener of choice), 1 large tablespoon cornstarch and 1/2 cup soy sauce -- I also like to add nutritional yeast. Add to pan of veggies and cook, stirring constantly, until thickened.
