Stir-Fried Brussels Sprouts

Stir-fried Brussels sprouts are fun to make and cook up in mere minutes.

Thinly slice the heads with a stainless steel or ceramic knife (to avoid discoloration of the leaves). You can also pop them into a food processor to shred.

Heat a large pan or wok over medium-high heat. Add a small amount of extra-virgin olive oil (1-2 teaspoons should do it). Add the Brussels sprouts (sliced or shredded) and stir for 3-5 minutes, or until tender.

As with most times you use this cooking technique, add additional veggies. Just be sure that all veggies have been cut to approximately the same size so they cook in the same amount of time.

To create a quick sauce that works with most dishes, combine 1/2 teaspoon Sucanat (or dry sweetener of choice), 1 large tablespoon cornstarch and 1/2 cup soy sauce -- I also like to add nutritional yeast. Add to pan of veggies and cook, stirring constantly, until thickened.
