Seitan from scratch?

I want to make seitan from scratch to be able to adjust the seasonings to fit whatever recipe I plan on using it in, but can't find instructions on how to do it. Can you help?
*****Sassy Sez - Hi Susan! Since I have never made seitan from scratch, I asked my good ol' Personal Chef pal Debbie Hickerson how she makes her homemade seitan.
Here's what she said:
"Sassy, this is very similar to my recipe (which is on an old hard drive). It is very easy to make if you mix with a bread machine (use 3 cups of flour and the appropriate quantity of water) or a stand mixer.
"I like to use half whole wheat and half white flour, and not wash quite all of the starch out. After cooking in broth, refrigerate the "steaks" in broth overnight."
