Seitan from scratch?

I want to make seitan from scratch to be able to adjust the seasonings to fit whatever recipe I plan on using it in, but can't find instructions on how to do it. Can you help?

Sassy Sez - Hi Susan! Since I have never made seitan from scratch, I asked my good ol' Personal Chef pal Debbie Hickerson how she makes her homemade seitan.

Here's what she said:

"Sassy, this is very similar to my recipe (which is on an old hard drive). It is very easy to make if you mix with a bread machine (use 3 cups of flour and the appropriate quantity of water) or a stand mixer.

"I like to use half whole wheat and half white flour, and not wash quite all of the starch out. After cooking in broth, refrigerate the "steaks" in broth overnight."

I recently found a recipe very similar to this and adjusted it to fit my own needs. It's way too easy.

1 cup vital wheat gluten
1 t. garlic powder
1 t. ginger
3/4 cup water
2 T. Bragg's Liquid Aminos or Tamari

Combine dry ingredients in medium bowl. Combine wet ingredients in small bowl, then add to dry ingredients all at once. Combine, using your hands to mix thoroughly. Let sit for five minutes then squeeze to eliminate any excess liquid. Cut into four pieces and stretch thin. Boil in broth with a small piece of onion and other seasonings as desired for 1 to 1 1/4 hours or until seitan is firm.

This recipe makes enough for two meals that serve 4 people. I wouldn't recommend doubling it unless you have an abnormally large pot in which to boil the seitan.
