Sauteed Swiss chard is incredibly delicious because a lot of the flavors come through to make a delectable base for your own Swiss chard creations.
You can use the stalks or not. But if you DO, then be sure to cut them off first because you may want to cook them separately. Cut stalks into 1-2" pieces. Coarsely chop the leaves.
(Personally, I just toss everything into the pan, leaves and stems together. Play around with it to see if the stalks cook up tender enough for you before the leaves turn to mush!)
Place a frying pan with a lid over medium heat. Add a little extra-virgin olive oil (1 teaspoon should do it). When the oil is hot, add cut stalks (if using). Stir. Add a few Tablespoons of water** and cover with lid. Saute until tender, 5-10 minutes. Add leaves to pan and cover again until leaves are tender, about 5-7 minutes. Or if you're lazy (like me), just toss the leaves and chopped stalks into the pan all at once and cook 5-7 minutes, or until desired tenderness.
Now comes the fun part. Use the Swiss Chard "Vegan Flavor Matches" to create your very own recipe. Add the foods and flavors you like directly to your pan. Warm. Serve.
** Adding a little water or other liquid (such as vegetable broth) to the pan ensures that the oil doesn't ever get too hot and makes for a very tender end result. Plus, you use less oil this way, which is healthier. ;o)
