Sauteed Greens

Sauteed greens are really simple to make.

You can use the stalks or not. But if you DO, then be sure to cut them off first because they'll have to cook separately.

Cut stalks into 1-2" pieces. Coarsely chop the leaves.

Place a frying pan with a lid over medium heat. Add a little extra-virgin olive oil (1 teaspoon should do it). When the oil is hot, add cut stalks (if using) -- you add these first because they take longer to cook. Stir. Add a few Tablespoons of water** and cover with lid. Saute until stalks are tender, 5-10 minutes.

Add leaves to pan and cover again until leaves are tender to your liking, another 5-10 minutes or so.

Now comes the fun part. Use the Greens "Vegan Flavor Matches" to create your very own recipe. Add the foods and flavors you like directly to your pan. Warm. Serve.

** Adding a little water or other liquid (such as vegetable broth) to the pan ensures that the oil doesn't ever get too hot and makes for a very tender end result. Plus, you use less oil this way, which is healthier. ;o)
