Sauteed Celery

To get the best results with sauteed celery you will first need to slice or chop the stalks. Celery prepared in this way is usually used for side dishes, or as an addition to a casserole or other main dish which can be layered into your dish or simply mixed in.

Place a frying pan with a lid over medium heat. Add a little extra-virgin olive oil (1 teaspoon should do it), or simply use water or veggie broth. When the liquid is hot, add the celery. Cook until crisp tender, about 5 minutes.

Now comes the fun part. Use the Celery "Vegan Flavor Matches" to create your very own recipe from scratch. Simply add the flavors you like directly to your pan. Warm. Serve.

My favorite use for celery made in this way is when making stuffing (dressing), such as for a vegan Thanksgiving meal. The salty, crunchy taste of the celery adds so much to these types of dishes.
