Making sauteed carrots are one of my favorite ways to prepare carrots because they cook up moist and flavorful. And depending on the flavors you add, you can have a totally unique carrot recipe whipped up in minutes each and every time.
Place a frying pan with a lid over medium heat. Add a little extra-virgin olive oil (1 teaspoon should do it). When the oil is hot, add diced, sliced, or chopped carrots. (You can also use carrots cut into matchsticks, but honestly I feel they're sort of a pain to cut and never seem to be worth the effort. But please give it a try -- you might feel the end result is worth it.) Stir. Add a few Tablespoons of water** and cover with lid. Saute for 5-15 minutes, depending on how small you have made the cuts. Carrots are done when they're tender to your liking. Use a fork to check for doneness.
Now comes the fun part. Use the Carrot "Vegan Flavor Matches" to create your very own recipe. Add the foods and flavors you like directly to your pan. Warm. Serve.
** Adding a little water or other liquid (such as vegetable broth) to the pan ensures that the oil doesn't ever get too hot and makes for a very tender end result. Plus, you use less oil this way, which is healthier. ;o)
