Sautéed Bok Choy

Sautéed bok choy isn't often a consideration because most people simply chop their raw bok choy and add it to salads. Others only know bok choy from a visit to their favorite Asian restaurant.

But whipping up a batch of cooked bok choy adds a nice change of pace and a new way to enjoy this tasty veggie.

I love bok choy and use it often. I think it has something to do with the fact that it's water-rich AND crunchy at the same time. This cooking technique works best when your veggie is first sliced or chopped.

Place a frying pan with a lid over medium heat. Add a little extra-virgin olive oil (1 teaspoon should do it), or simply use water or veggie broth. When the liquid is hot, add the Bok Choy. Cook until crisp tender, about 5 minutes.

Now comes the fun part. Use the Bok Choy "Vegan Flavor Matches" to create your very own recipe. Add the foods and flavors you like directly to your pan of bok choy. Warm. Serve.

Be sure to try your bok choy raw, grilled and steamed too!
