Roasted sweet potatoes, potatoes and yams are some of the most favorite comforting foods. They're tender on the inside and crunchy on the outside. How can you go wrong? And they're really easy to make.
Scrub your vegetables. You can leave the skins on (recommended) or peel them. Cut them into quarters or cubes.
Place in an oven-proof dish. Drizzle with extra-virgin olive oil (around a Tablespoon -- you can always add more). Stir until all potatoes are covered with a little oil. Salt and pepper.
You can keep the potatoes uncovered for a slightly crispy end result, or cover them (foil works great) if you like them moist; either way the results are delectable.
Bake in an oven set to 400 degrees for 15-20 minutes or so, stirring occasionally. They're ready when you can easily pierce them with a fork. Another signal they're almost done is when you can smell their aroma wafting through your home.
