Pureed Sweet Potatoes,
Pureed Potatoes and Pureed Yams

Pureed sweet potatoes, potatoes or yams begin by first boiling or baking...

If using the boiling method: When potatoes or yams are tender, drain.
If using the baking method: When potatoes or yams are tender, cool and peel.

Place cooked sweet potatoes, potatoes or yams in a blender or food processor while still hot. Blend or process while slowly adding water, veggie broth, or non-dairy milk 1 Tablespoon at a time until smooth.

Be careful to allow air to escape when processing hot foods or the pressure could build and shoot the lid off -- quite the mess, I can tell you!

Best for soup, baby food, or when using in a pie. Can also use in muffins and other baked goods. Use the Potato, Sweet Potato and Yam "Vegan Flavor Matches" to create your very own recipe.
