Parmesean Cheese Substitute?

by Chris Lewis

I'm trying to adapt recipes for vegan friend and don't know what to use for the salty, cheesy taste of parmesean parmesan that is part of a lot of vegetarian recipes I use.

Any ideas?
Thanks!

Sesame Substitute
by: Rachel Assuncao

When I need a parmesan substitute, I measure about 2 tablespoons of lightly toasted sesame seeds into my spice grinder and grind until fairly smooth. Then I add about 2 tbsp of nutritional yeast and 1/2 tsp of ground unrefined sea salt and blend again until fairly smooth.

I've sprinkled this on pasta and soups with good results and mixed it into breadcrumbs for a casserole topping for a crunchy and zesty topping. It seems to be pretty versatile.

Vegy Cheese Products
by: Russell

I use Vegy Parmesean Cheese. The taste is really close to real Parmesean cheese. It is great in soup or strait out of the container.
