Vegan & GF Challenges

My daughter is autistic & epileptic and the gluten free/casein free (vegan) diet has really helped her.

The challenge is to avoid any processed food - many of the packaged tempeh, ie Fakin Bacon, 3 grain tempeh, are not GF. So... read the label.

A Gluten-free Vegan also!

It's so good to know I'm not alone here!

I have had years of tummy trouble which lead me to give up dairy. Then I gave up meat, eggs, chicken, I couldn't digest it and it didn't appeal to me but I would still eat fish. Now I have gone completely vegan for the purposes of health and beliefs. Now I find out I am gluten intolerAnt due to the fact I have Leaky Gut Syndrome.

I'm new to learning all about gluten free vegan life so any info given would be great and I'm happy to share!

I realized I was gluten intolerant about a year ago. This is what I do--and I feel so much better it isn't really even a problem for me.

You have to avoid anything that has gluten.That means wheat, rye, and barley, or things that come from these. All other grains are fine. If you're use to eating lots of processed foods, it will be an adjustment. You need to watch out for maltodextrin, a cheap sweetener, in which the malt part is usually grown on barley--off limits, unless the ingredients specify something like "maltodextrin (corn)--that means it's grown on corn, not barley.

I use buckwheat a lot, which despite the name is not in the wheat family and is gluten free with complete protein. For breakfast, I make buckwheat pancakes from a regular pancake recipe, substituting buckwheat for regular wheat, almond milk for milk, agave nectar for sugar. I still use eggs sometimes, but you could use an egg substitute. I also have buckwheat groats (lousy name, but it just refers to the cut of the buckwheat) the same as I would oats. I eat oats now. Oats don't have gluten, but if you're super sensitive this can be a problem as they're milled in factories that do the others, so they get contaminated.

There are some good almond crackers by Blue Diamond. Rice cakes are a staple. And natural foods stores have a selection of gluten free pasta.

Restaurants are hard. Soups are regularly thickened with flour. But most cooks are familiar with this condition and can help you find something or will make something special just for you!

This winter I'm going to experiment w/gluten free baking. I've basically just given up baked goods. Only a bit of a drag since, like I said, I feel so much better. I just made cornbread with almond flour and it was good, tho a bit crumblier.

Thanks everyone for the input on GF and Vegan eating. I am learning about 'quinoa'. I learned it is a grain that is very user-friendly, somewhat like TVP. Are there any comments on this?

What do I eat?

I am allergic to wheat, gluten and dairy. I cannot eat meat because my system cannot handle it.I also have Lupus, and have been having a lot of flare ups. I have been trying to eat a raw vegan diet hoping it will help me to become healthier, not sure if it's the right thing for me. I need help with recipes that are appropriate for me to eat.

I can deal with the gluten thing but no soy makes the diet worrisome protein wise...any sugestions?

High protein grains.

Try grains high in protein like Quinoa and Buckwheat and other legumes.
