Finding Vegan Food In A Non-Vegan Restaurant

I turned vegan 6 weeks ago - had a heart scare and it was a wake up call as well as spending hours reading about the cruelty to animals.
I am okay and love it when I am home. I travel for work, and next week I am at a conference. Do you have any tips on eating out as a vegan at restaurants as I cannot always do Japanese or Mediterranean, and conference food is awful!

When first starting out, it can be challenging to find vegan vittles, but it is certainly not impossible. And I find it incredibly fun to work with the server and the chef to come up with a dish that even the chef didn't know could be so delicious. :O)
Of course, it's easy to simply take a dish that has cheese or meat and ask for "no cheese" or "no meat", but this is not always possible, especially if the dish has been mixed ahead of time and they simply cannot make that request work.
