Best vegan recipes for omni restaurants

Hi there:
We at Ottawa's Vegetarian Association are doing a restaurant outreach campaign whereby we try to get omni restaurants to offer vegan options. Any advice on the best online recipes for such restaurants? I'm especially looking for entrees that are a) "foolproof" i.e. easy for inexperienced cooks to make b) delicious (not so much concerned about the healthy) c) have rather basic ingredients (faux meat/cheese is OK - we're providing them with lots of analog sources).

Suggestions for other courses are welcome too. Thanks very much!

Oh, and recipes anything using cashew cream and cashew cheese so they won't miss the dairy. You can still do some fried items like green tomatoes, tempura veggies, etc. You want to appeal to them as if you were't serving anything "vegan" and don't label it vegan that word seems to scare lots away.
