Barley to water ratio after soaking

I took 1 cup of dry barley. I soaked it. Now I have a lot more barley than 1c. So do I take 1c of the soaked barley to 2c. broth? Or is it the whole pile that swelled up to 2c broth?

No one seems to state this fact in ALL the websites I reviewed regarding cooking barley. Please help! Thanks, Cara

Sassy Sez: Hi Cara, I can understand the barley-water ratio can be confusing.

The recommended amount of water is what you will use regardless of whether your grains (or beans, for that matter) are soaked.

The only difference is that unsoaked grains/beans take longer to cook and are more difficult to digest.

So to answer your exact question, use 2 cups of water for 1 cup of pre-soaked barley.
