When you're ready to let your creativity lead the way, build your own baked carrot recipes from scratch. And using the Carrot "Vegan Flavor Matches" makes it a (carrot) cakewalk! ;o)
Baking carrots usually begins with pre-cooking the carrots by either boiling or steaming first.
After pre-cooking, they're ready to be used to whip up your baked carrot recipes.
Create a delectable sauce by using some of your favorite flavors from the Carrot "Vegan Flavor Matches". For instance, for fantastic vegan glazed carrot recipes, begin your glaze creation with a base of agave nectar, brown rice syrup, melted non-dairy butter (such as Earth Balance), or maple syrup. Then add some of your favorite herbs and spices. Pour over your carrots and bake at 350 for 10-15 minutes.
You can also make your baked carrot recipes without precooking first. Simply slice, chop or grate and place in an oven-proof dish, cover with sauce (as directed above), and cook, covered, at 400 degrees for 30-45 minutes, depending on the size of the cut.
To make roasted carrots, cut carrots in half lengthwise, and then cut into 1" to 2" pieces. Drizzle with a little extra-virgin olive oil. Then sprinkle with salt, pepper and herbs/spices of your choosing (see the Carrot "Vegan Flavor Matches"), and roast at 400 degrees for approximately 20-30 minutes, or until the outsides are browned and the insides are tender. Baby carrots need not be cut first.
One of my favorite ways of preparing baked carrots is to make a beautiful carrot loaf. First, steam sliced carrots until very tender, then place in a blender (or food processor) with extra-firm tofu, a little non-dairy milk, bread crumbs, walnuts, diced onion, basil and Bragg's Liquid Aminos (or Tamari) and just a little oil until smooth. (Just remember to be VERY CAREFUL when adding liquids or your loaf will be too mushy and take a VERY long time to cook!) If using a blender, you will have to stop to scrape the sides down often. A Vita-Mix, with its tamper, works perfectly for this job. Pour into an oiled loaf pan and bake at 350 degrees for 30 minutes.
