Artichoke Burgers

Hi Sassy! Do you or anyone out there have a vegan artichoke burger recipe to share? My husband and I have found fantastic frozen artichoke burgers (only available at Whole Foods around here, and expensive to boot) and I'd love to make my own, but need some guidance. Thanks for your help!

Sassy Sez: Ooooh, Teresa, I am intrigued. Have never even heard of artichoke burgers! But DAAAAYUM I love artichokes. And I love veggie burgers. So the combo must be heaven.

Re artichoke burgers. Looking at the ingredients of one commercial brand, they are:

Artichokes, cashew nuts, brown rice, celery, olive oil, potato and corn starch, evaporated cane sugar, salt, spices

What it doesn't say is whether these are Jerusalem, or globe artichokes. My guess would be jerusalem artichokes. If so, I would steam them first until cooked, then blend maybe 2/3-1/3 proportion with cashews, and add the other ingredients (rice, cooked celery, oil, spices and flour) to make burgers. Artichokes are bland, so perhaps add some interesting spices (like cumin.)
