Vegan Chunky Cauliflower Soup

The idea for this tasty Vegan Chunky Cauliflower Soup dropped into my mind when I was in the mood for a nice warming bowl of hot soup. When I opened the refrigerator door, a big beautiful head of cauliflower was staring back at me as if to say "Pick me! Pick me!". Well, far be it from me to get in the way of the dreams of a cauliflower. So it was decided then and there that it would be the main ingredient for my soup.

The Cauliflower Vegan Flavor Matches helped me to select most of the remaining ingredients, such as almonds, garlic, lemon, onions, cumin, and peppers (both green bell and chipotle).

Remember, the Flavor Matches help you to build a recipe from scratch by pointing you in the direction of the foods that match perfectly with your chosen ingredient. They're just SO helpful and it's just what I need after a long day when my brain feels like mush.

The secret to the soup is in the tasty creamy almond broth. Whenever you mix vegetable broth (or water) with nuts or seeds, you'll end up with a thicker and creamier broth. Since I didn't want the entire soup to be a cream soup, I removed a cup or so of the broth to blend with the almonds before stirring back into the soup. By the way, when you remove some of the broth, it's okay if you nab some floating veggies. No biggie. :O)

I served our soup with a big crispy green leafy salad with chopped onions and cucumber slices, and some Sassy's Seedalicious Topping. A warmed tortilla added the perfect touch.
