This recipe for Vegan Roasted Vegetable Kabobs is always a hit. The veggies are marinated in a lushious pesto/balsamic concoction, then roasted to bring the flavors out. Yum!

Of course, you can feel free to grill these kabobs also.

Just be sure that no matter which cooking method you use, that you soak wooden skewers in water for 30 minutes or more to avoid burning. Or use metal skewers.

Serve your kabobs over a bed of brown rice, quinoa or couscous.
